The chef’s choice offers a wide variety of dishes and is prepared in smaller portions in the hope that “since we are a country blessed with abundant ingredients, we would like you to enjoy the seasonal flavors, even if only a little at a time.” After enjoying the dishes, you can have nigiri made with seafood that he has searched for by visiting fishing ports all over the country, and he uses it sparingly.
