Ichijoji Norihide （一乗寺 乃り英）

After training in various Japanese restaurants, he opened a Japanese restaurant in his current location. Guests are served refined cuisine prepared with seasonal ingredients.

We go to the foot of Mt. Hiei to fetch water, and this water goes very well with Japanese cuisine. The water is used to make broth and boil ingredients.

Behind the simplicity of the presentation, you can feel the craftsmanship that goes into every step of the process.
